Artichoke Spinach Dip


Artichoke Spinach Dip
Printable Recipe

1 - 14 oz. can artichoke hearts, drained and finely chopped
1 - 9 oz.bag fresh baby spinach, chopped
1-1/2 cups fresh Parmesan cheese, grated and divided
1-1/2 cups shredded Monterey Jack cheese, divided
4 oz. cream cheese, softened
2/3 cup light sour cream
1/3 cup light mayonnaise
1 - large garlic clove, minced
1 - Tablespoon minced onion
2 -pinches red pepper flakes
Salt & Pepper, to taste
Paprika, to taste

1. Preheat the oven to 350 degrees F.

2. Combine the artichokes, spinach, 1 &1/4 of Parmesan cheese, 1&1/4 cups of Monterey Jack cheese, cream cheese, sour cream, mayo, garlic, onion, red pepper flakes and salt & pepper in a large bowl mix well.

3. Spoon artichoke mixture into a 1-1/2- quart baking dish.  Sprinkle the remaining cheeses on top, and then sprinkle with paprika.  Bake for 30 minutes.  Serve warm with tortilla or pita chips, crackers or vegetables.

Grilled Mozzarella Cheese Sandwich
















Sometimes I crave a good homemade mozzarella cheese stick, don't you?  I thought there had to be some way to get the taste of a cheese stick, but without the hassle of making them from scratch.  Or, heating up your oven for the store bought frozen ones.  Hence, the grilled mozzarella cheese was born!  :)


Tastes like a cheese stick- Grilled Mozzarella Cheese Sandwich

1 egg, beaten
 2 tablespoons of Italian Bread Crumbs
1/8 tsp. garlic salt
1/8 tsp. garlic powder
1/8 tsp. Italian Seasoning
1/8 tsp. oregano
1 to 2 tablespoons butter, for frying
2 -slices bread  (I used honey-wheat)
2 to 3 slices of Mozzarella (depends on how gooey you like it)

Break egg into a wide shallow bowl, beat lightly with a fork.  Combine the next five ingredients in a different bowl, stir to combine.  Put the butter in a frying pan and melt over medium-high heat.  Dip the bread in egg, then in your dry seasoning.  Place in your hot skillet battered side down; place cheese slices on bread and fry until golden brown. Assemble your sandwich and enjoy.

Makes one sandwich 
Serve with marinara sauce on the side, optional

Cheese Sticks


Would anyone like a Cheese Stick?


Mozzarella Cheese Sticks
Printable Recipe

2 eggs, beaten
1 cup Italian bread crumbs
1 cup panko bread crumbs
1/2 tsp. garlic salt
1/2 tsp. onion powder
1 cup cornstarch
1 package mozzarella string cheese


  • Beat eggs in a small bowl; set aside
  • Mix the Italian bread crumbs, Panko bread crumbs,  garlic salt and onion powder in a medium bowl; set aside.
  • Put the cornstarch in a medium bowl; set aside.
  • Cut cheese sticks in half.  One a time, dip cheese sticks in egg mixture, roll in cornstarch, dip back into egg mixture,  then roll in bread crumbs.  Continue this process until all the cheese sticks are coated.
  • Place cheese sticks in the freezer for approx. one hour.
  • Fry in canola oil until golden brown. approx. 1- 1/2 to 2 minutes.  
  • Drain on paper towels.
  • Sprinkle with powdered parmesan and serve with ranch, or marinara sauce.

*keep a close eye on them because they will fry up in a hurry*

Left-over bread - Garlic Bread

I still had some hoagie buns from the other night.  So, why not make some garlic bread?  

I mean it goes well with; 

Spaghetti
Lasagna
Shrimp Scampi
Shrimp Creole
Coconut Shrimp
BBQ Shrimp
Pineapple Shrimp
Alright, enough of the Bubba Gump Shrimp Ideas



What about;

Steak and Potatoes
Chicken Scampi
Garlic Chicken and Noodles

Or just plain out by itself.  



This is another no recipe - recipe.  It's meant to give you ideas,  and dreams of garlic and cheese tonight!    You can thank me later.  :)


Ingredients:


Bread
Garlic Powder - sprinkle extra
Garlic Salt
Italian Cheese, Shredded.


Broil until cheese is melted and gooey and all that good stuff.

Chicken Provolone with Garlic and Tri-Color -Peppers



This is one of the easiest recipes and I make it a lot. Sorry no precise measurements here.





Season Chicken with garlic salt, garlic powder and pepper. Grill until done. At this point you might want to cut up the chicken into bite size pieces, which I didn't do. :)



Saute peppers, onions and garlic. Pour over chicken.



Top with provolone cheese. Melt under broiler. And you are done! This is good on sandwiches, over garlic noodles or just by itself.

Garlic Cheddar Biscuits




Garlic Cheddar Biscuits

Ingredients:

2 cups of bisquick
1/2 teaspoon of garlic powder
1 -1/2 cups of shredded cheddar cheese.
2/3 cup of buttermilk

2 tablespoons of butter
1 teaspoons of oregano
1 teaspoon of garlic salt

Directions:
Preheat the oven to 400.

Combine the biscuit mix, cheese, and garlic powder. Stir well.

Add the milk and stir. The mix should be thick, not sticky. You may need to use your hands to get the ingredients well combined.

Bake for 10 minutes of until lightly golden.

While baking, melt the butter in a small bowl and add the oregano and garlic salt.

Using a pastry brush, brush on the butter. - Return to the oven for about 5 minutes.

Cheese Bread

I made all that bread last night, so what's a girl to do? Make cheese bread, of course!


Cheese Bread

3/4 cup black olives, chopped
1/4 cup green olives, chopped
1 green onion
1/4 cup real mayo
1/4 cup parmesan
1 tsp. garlic powder
2 tablespoons butter, softened
1 cup mozzarella or monterey jack cheese



Mix together and spread on 1/2 loaf french bread. Bake on 325ยบ for 20 to 25 minutes.
