Aww, and goofy Uncle Harry. Ok. I'm lying. I don't have a niece or an Uncle Harry. I'm just trying to find someone to take the blame for these eggs I made. It looks like they've seen better days.
Anyway, I thought these would be a cute idea for Easter. I hope yours turns out better than mine did.
Directions:
Cut a small slice off the bottom of hard boiled eggs, so they will sit upright. 1/3 from top, cut a zig-zag around egg. remove top and carefully squeeze out yolk. Mash all yolks with a fork and add mayo, mustard, salt & pepper. Pipe yolk mixture back into eggs, replace top of egg and add sliced olives for the eyes. Use a pimento or sliced carrot cut into a small triangle for beak.
