Strawberry Cobbler Cake

I know, I need a photographer in the worst way. I have a strawberry eclipse going on here.


Strawberry Cobbler Cake

1 - cup butter, divided
1 - cup granulated sugar, divided
1 - whole egg
1 - tsp. pure vanilla extract
1-1/2 cup self-rising flour- sifted
1/2 cup milk
3 - cups strawberries, hulled and sliced


Preheat oven to 350

Soften 3/4 cup of butter, add 3/4 cup sugar and beat on medium, mix well. Add egg, vanilla, mixing well.

Add flour and milk to butter mixture until well combined.

Pour batter into greased 8 inch pan.


(looks like icing, doesn't it? Yummy goodness!





Top with sliced strawberries.





For the topping, combine 1/4 cup flour, 1/4 cup sugar in a small bowl. Cut in 1/4 cup chilled butter. Sprinkle over the cobbler.




Bake 350 for 45 minutes.



Serve with Ice Cream or Whipped Topping. Which ever you prefer.
